Freeze-dried Carrot Granules (FD carrot Granules)
Freeze-dried carrot granules are pure fruit and vegetable raw materials in granular form made from fresh carrots through vacuum freeze-drying (FD) technology. The entire process is free of additives and can retain the color, flavor and nutrition of fresh carrots to the greatest extent. I. Basic Characteristics
(1)Raw materials: 100% fresh non-GMO carrots, free of pesticide residues, additives and preservatives.
(2)Appearance: Orange-red/bright orange, uniform particles (common 3×3mm, 5×5mm, customizable), loose and porous texture, light and brittle, with natural luster.
(3)Smell: Natural, sweet and refreshing carrot aroma, no off-flavors.
(4)Moisture content: ≤5% (far lower than 10% – 15% when air-dried).

Ii. Core Process (Vacuum Freeze-Drying FD
(1)Raw material selection: Fresh carrots that are moderately ripe, free from rot and lignification.
(2)Cleaning and peeling: High-pressure cleaning, mechanical/manual peeling, and impurity removal.
(3)Dicing/granulation: Cut into uniform small particles (3-10mm).
(4)Blanching and color protection: Blanch in hot water at 80-95 ℃ for a short time to inactivate enzymes, protect color and inhibit bacteria.
(5)Rapid pre-freezing: Freeze rapidly at -18℃ to -40 ℃ to form fine ice crystals, protecting the cell structure.
(6)Vacuum sublimation drying: Under a high vacuum of 0.1mbar, the temperature rises slowly (from -25℃ to +40℃). Ice directly sublimates into water vapor, and the freshness is locked in at a low temperature (the entire process is < 40℃).
(7)Screening and packaging: Grading screening, metal detection, aseptic packaging (aluminum foil bags/double-layer PE bags).

(3)Dietary fiber: 23-25 grams (5-6 times fresh).

Iv. Key Differences between FD and AD (Air-Drying)
(1)Nutrient retention: FD 90% – 95%; AD 50% – 70% (severe vitamin loss).
(2)Appearance and color: FD bright orange-red, plump in shape; AD shows dullness, shrinkage and Browning.
(3)Taste: FD is crispy and tender after rehydration. AD is hard and dry, but tough and tough after rehydration.
(4)Rehydration speed: FD 3 to 5 minutes; AD 15 to 30 minutes.
(5)Shelf life: FD 24 months; AD: 12 to 18 months.
(6)Price: FD is approximately 2 to 3 times that of AD (with higher process costs)
